SHAKSHUKA
OVEN-BAKED CHICKEN AND VEGGIE KEBABS
CHOCOLATE MOUSSE WITH RASPBERRIES
INGREDIENTS: 3/4 cup whole-wheat couscous 3 tablespoons extra-virgin olive oil, divided 3 cups low-sodium vegetable broth, boiling, divided 1 red onion, thinly sliced 1 small eggplant, chopped into 1/2-inch pieces 1 red bell pepper, seeds and ribs removed, chopped 4 garlic cloves, minced 1 (14-ounce) can low-sodium chickpeas, drained
– 1 teaspoon freshly grated ginger
– 1 teaspoon ground cumin
– 1/4 teaspoon ground allspice
– 1/4 teaspoon ground coriander
– 1/2 teaspoon sea salt
– 1/4 teaspoon freshly cracked black pepper
SAMPLE RECIPE: MOROCCAN VEGGIE & CHICKPEA COUSCOUS Serves 4 // Prep Time: 15 Minutes // Cook Time: 15 Minutes
Couscous is a North African staple that’s easy to make—and it’s a delicious grain base for this veggie and chickpea dish.
DIRECTIONS:
1. Put the couscous in a large, heatproof bowl. Add 1 tablespoon of olive oil and toss to coat.
2. Pour 1 1/2 cups of boiling vegetable broth over the top of the couscous. Cover and allow it to sit while you prepare the other ingredients.
3. In a large skillet, heat the remaining 2 tablespoons of olive oil on medium-high until it shimmers.
4. Add the onion, eggplant, and bell pepper. Cook, stirring occasionally, until the vegetables soften, about 5 minutes.
5. Add the garlic and cook, stirring constantly, for 30 seconds.
6. Add the remaining 1 1/2 cups of broth and the chickpeas, ginger, cumin, allspice, coriander, salt, and pepper. Bring to a simmer and reduce the heat to medium-low.
7. Cook, stirring, for 5 minutes.
8. Fluff the couscous with a fork, then add to the skillet. Cook, stirring, for 2 minutes more.

A huge body of evidence ties ultra-processed foods to autoimmune disease, heart trouble, and neurologic conditions. Eat healthy, be healthy. Because you have to have nutrition anyway, why not eat right so you can feel right?

If I could give this book 10 stars I would. The information is easy to understand and thorough, the meal plan is simple, and the recipes are wonderful. The recipes are easy to follow, budget friendly, fairly quick to make, and delicious!! We’ve been using it for a few weeks. My pain has lessened and I have lost 12 pounds. I also have a much better understanding of what foods are helpful so I can adapt recipes and find recipes outside of this book that would be helpful on this journey. Definitely recommend!!

Delicious recipes
This book has weekly meal plans and recipes that cover a whole month plus a few extra recipes. I followed the first week as it was written. The recipes were very good but following the weekly meal plan seldom used the leftovers. I started making my own weekly plans based on theirs but incorporated the leftovers into the weekly plan. I did substitute some items that we didn’t eat( beef for lamb) and some vegetables that were more cost effective. But otherwise I like this book for the good information on dealing with inflammation and foods to eliminate. Been doing this for 5 months, feel better and down 20 lbs.

This book with an overview of osteoarthritis, explaining the connection between arthritis and nutrition along with other influences like sleep and exercise. It follows the guidelines of the Mediterranean Diet that works against pain and inflammation as well as weight loss that will turn the tide on the effects of arthritis and even work toward OA prevention. The largest portion of the book is the three-week menu plan, shopping lists, and tips to make the menus work. Then the menu plan is followed by the recipes organized by meal. A helpful detailed index in the back makes it easy to find by ingredient. There is also a helpful bibliography list of resources and references.What I liked: I liked that it went into detail with menu plans and suggestions and especially that it follows the Mediterranean diet plan. I liked that each recipe included substitutions and nutritional information. I liked the pantry/shopping lists so you know what you need to have on hand and most ingredients are easily obtained.What I didn’t like: There are no pictures of any of the recipes. None. I know this is a little thing, but it does add interest and impact to a cookbook when there are at least a few photos to show what a dish looks like.Recommendation: I would definitely add this book to my collection, not just for the sake of arthritis relief, but for the tasty recipes, menu suggestions, and more. This book includes brown sugar in recipes and a lot of tomato recipes. Tomatoes are of the “nightshade” vegetables and should be eaten with caution and sugar is bad. If you need sweetener you need pure honey or pure maple syrup. A complete waste of money.
