Good design and function
Let’s face it–most people can live without an herb knife for the simple reason that most people don’t use a lot of fresh herbs in their cooking. You don’t need a knife to open a jar of dried herbs. But for those who are able to use fresh herbs, this is a handy little gadget to have–an ergonomically designed herb chopper and stripper. It’s basically just a stamped piece of steel with that fits in your palm with one straight, sharp edge; that’s for chopping/mincing herbs. It’s pretty sharp right out of the box/bag. Could you make it sharper? Sure. Do you need to? Not really. The blade comes with a plastic cover to protect the edge (and you!) when you aren’t using it. I’ve seen a couple of reviews that complain that it is hard to get the cover on/off. All I can say to that is that you need to be smarter than a piece of plastic. There’s a little notch in the blade that the cover hooks on to; maybe that’s causing the confusion.The part about this gadget that I really like, however, are the holes cut into the handle for stripping herb leaves off of stems. The holes are in varying diameters (or circumferences, if you will) to fit different-sized herbs through, from very tiny stalks of thyme up to bigger things, like maybe kale (although that would be a squeeze, I think. All you have to do is pull the stalk through the hole and voila!–the leaves strip right off. Huge time and aggravation saver!Of note, I saw a very similar tool advertised in a catalog for literally 3.5 times the price of this one. There doesn’t appear to be much, if any difference, and this isn’t like a prized Japanese or German knife that you are going to want to show off. Accordingly, I think this is the one to get!

As described and does work. Caution that the sharp cutting edge is very sharp so always keep the plastic cover on when not in use. The steel of the noncutting edges are also a little sharp/rough. Use care.

Works well enough
I tried this on parsley. It pulled all the leaves until we hit the top fourth of the stem. It made the process easier and it was kinda fun. The bottom part is supposed to be a blade. I tried to cut up the parsley afterwards and it did not work so well. I think this product is worth it for the price. I for one hate picking leaves off herbs, but I also don’t want the stem. It is smaller than I thought it would be. I was actually glad about that. It fits in my utensil drawer and doesn’t take up much space.

Cut end is sharp. Worked well and did the job
Easy to clean. Easy to use. I grow all my own herbs and dehydrate them so there is always a lot of prep involved. This took some of the work out of the leaves stripping. I’ve tried the plastic ones and they weren’t sharp enough to cut the leaves cleaning. this strips them off super nicely. Very pleased that I caved into myself and purchased this one.

Purchased with great expectation but is of no use. Neither coriander, non spinach. Therefore, it should not be purchased for this purpose. Better use a scissor instead. I am full of repent. Don’t go by review rating which is misleading and doesn’t reflect the actual use of the item. Thank You.
