Avocado with Tuna Salad

This meal contains plenty of healthy fat and protein to keep you feeling satisfied for hours. If it seems too light, serve over simply dressed arugula or baby spinach, sprinkled with chopped almonds.

Beans, Greens, and Tomatoes with Brown Butter

Browned butter is an easy “secret” ingredient to enrich and add depth of flavor any time you would use olive oil. You can mix it with a little Dijon mustard and fresh lemon juice to make a dressing, or just spoon it over the simplest ingredients. Once you’ve tried brown butter, you’ll use it all the time as a finishing touch for vegetables. Try it on steamed kale or broccoli; it’s transformational!

Speedy Sheet-Pan Fish Supper

Firm whitefish fillets work well in most one-dish recipes, especially those where you’d use chicken breasts, and fish cooks more quickly than chicken. Make sure the fillets are roughly the same thickness, 1½-2 inches.

Gazpacho

This chilled, uncooked soup is bliss on a hot day. It’s also surprisingly satisfying and energizing, given that it doesn’t contain protein. Served in glasses with a meal, it’s like a salad and a beverage in one! The sherry vinegar is a nod to gazpacho’s culinary roots in Spanish cuisine, but feel free to use lemon juice instead.

    Looks like great recipes.
Real recipes I can make. Now let’s see how many will work for a type 1 diabetic. I’m hoping it will be great and not spike my insulin.

The author failed to provide #Servings or nutritional information/Carbs per serving for the recipes.
This cookbook gives a concisely explained, 15-page explanation Introduction of what to eat, when to eat it and other very helpful information. The bulk of the book contains a wide variety of recipes that I have enjoyed and still plan to try. I also find it helpful to have a 2-page “Pantry” section that suggests what to keep stocked so the recipe ingredients are at hand. Lastly, there are a variety of sample meal plans for those starting out with fasting, which would be helpful for those who need precise instructions to help with the learning curve of fasting. That is all the good. However, I have to deduct a start from my rating because I am used to seeing a Nutritional Breakdown of the recipe in the various diet-specific cookbooks I have collected over time. For those of us who want to track our fats, carbs, and proteins, it would be helpful to have included this information. How can the cover of the book claim “Low-Carb Recipes” and NOT provide the carbs per serving in the recipes? I personally love beets, but am avoiding them while trying to lose weight on Keto, because I don’t want to eat so much of my daily carb allowance by choosing them. The Rainbow Beets with Chevre recipe looks divine, but includes 8 sm-med beets, 1/2 walnut pieces and goat cheese. The recipe does not say how many servings this recipe makes and also does not provide how many carbs, fats and protein are in each serving. This oversight is just so disappointing.

    Ended up returning it
The book is beautiful to look at but the recipes were just eh. Most of these can be found in other books. Plus a lot of these ingredients were unappealing to me. So I returned it.

Another great book by the awesome Dr. Fung. Wonderful real food recipes with healthy ingredients. This book is beautifully bound and has wonderful pictures. In my family of 4 there are no diabetics, but we eat this way as prevention and a way to feel great. My kids (7 and 1) love this kind of eating and they are healthy and happy.
