Brown Rice Stuffed Pepper
Servings: 4
1. Cut across the pepper at the stem end and carefully scoop out the seeds and excess pulp. This constitutes the cap of the finished dish. Retain the stem of the cap for a nicer presentation.
2. In a bowl, mix the brown rice, shallot, celery, kale, parsley, nuts, vinegar, and lemon juice and zest. Essentially, this is a brown rice salad. Taste it and adjust acidity and other flavors.
Optional: You can add black pepper in your rice mix. And if you want more heat, add 1 finely chopped jalapeno or as much as you desire.
3. Fill each hollowed out pepper with the brown rice salad.
4. Place the stuffed peppers on a baking sheet, replace the cap, and roast in the oven at 350°F for 45 minutes. Allow the roasted peppers to cool a bit.
5. Serve as is or with a side salad.
Ingredients 4 large yellow or red bell peppers, cored 2 cups brown rice, cooked 1 shallot or small red onion, minced 1 cup kale, chopped finely 2 sticks celery, chopped finely 1 tablespoon freshly chopped parsley leaves ¼ cup Macadamia nuts or almonds, chopped coarsely ¼ cup apple cider vinegar and 1 lemon, zest and juice

This cookbook is a combination of great recipes and all their healthy benefits. The recipes are easy to follow well thought out. I love the information on why it’s healthy. I’ve enjoyed each recipe that I’ve tried. It’s nice to have a fresh perspective on what and why we should be eating.

Great cookbook to add to your collection!
I received the book and opened the package immediately. I’ve been looking forward to this book. It’s a perfect blend of science backed nutrition and great and accessible recipes for all levels of cooks. It’s an interesting read in the front of the book with the knowledge and science for a heart healthy diet. Each recipe also has heart healthy information for the ingredients used. The recipes are a great blend of different kinds of cuisines. So you can experiment with different flavors from different cultures and all the recipes are heart healthy but with intense flavors. So many creative recipes. In the back of the recipes there are different spice blends, marinades, chutneys and sauces that can be used everyday. I know that this is supposed to be a heart healthy cookbook, and it is, but it’s just a great cookbook with flavor forward recipes for everyone. I recommend this book for everyone.

So many wonderful recipes!
I like how this cookbook begins with the importance of the 6 pillars of a heart healthy lifestyle and gives tips for each of the pillars and then lists the key components needed in a whole food plant based diet. There are so many choices in each category and each recipe gives a “Heart Health Note” and a difficulty level. I love the pictures that accompany some of the recipes because it allows me to see how to plate the final dish which adds to my visual experience before tasting the food.With so many recipes to choose from, I find that it will be a hard decision on what to try first as they all sound so wonderful. I am looking forward to expanding the plant based ingredients and spices that I use. I love this cookbook so much that I bought 2 more to give as gifts to my aunts
